Ingredients
Muffin Batter
1.5 cups flour
3/4 cup brown sugar
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
3/4 cup milk
1/3 cup melted butter
2 eggs
2 tsp vanilla
Apple Mixture
1 large apple, thinly sliced and peeled.
2 tbsp brown sugar
Crumble
1/2 cup cold salted butter
1/4 cup brown sugar
1/4 cup white sugar
1/3 cup all purpose flour
Instructions
Make the Batter
Preheat the oven to 375F. Grease a muffin tray and line with baking cups or with parchment paper.
Combine the flour, sugar, cinnamon, baking powder, baking soda and salt in a bowl. Whisk until well combined.
In separate bowl combine the melted butter, eggs, milk and vanilla. Mix until well combined.
Add the wet mixture to the dry mixture and combine using a hand mixer on medium speed. If you’re using a whisk, mix vigorously.
Make the Apple Layers
In a separate bowl, combine the thinly sliced apples and brown sugar until all the slices are evenly coated.
Make the Crumble
Combine the cold butter, sugars and flour in a bowl and mix using your hands. The mixture should be crumbly.
Assemble the Muffins
Spoon the muffin batter into the muffin tray. About 1 tbsp.
Layer with two thin apple slices. Add another tbsp of the batter. Add two more apple slices. Add another tbsp with batter. top with the crumble mixture (about 2 tsp).
Repeat this step with the remaining 12 muffins. Bake for 15-17 mins.
Let cool for 5-8 minutes and enjoy!!!
