Ingredients
2 cups beef or veggie broth
1 cup orzo
1 white onion diced
2 tbsp sage, chopped
1.5 cup butternut squash, peeled and cubed
2 tbsp olive oil or butter
Salt to taste
Parmesan cheese to taste
Instructions
Heat a larger sauce pan over medium heat. Add the olive oil and sage to the pan. Let the sage infuse the olive oil (2-3 minutes).
Add the diced onion to the pan and cook until translucent.
Add the orzo and cook until slightly toasted and evenly coated with the olive oil.
Add the butternut squash and the broth. Cover and cook for 15-20 minutes.
Top with Parmesan, serve immediately and enjoy!
