Time: 20 minutes
Yield: 1 stick of butter
INGREDIENTS
1 stick unsalted butter
3 sage leaves, chopped
Salt to taste
3 cups ice cold water and ice cubes
INSTRUCTIONS
Heat a pan over medium heat. Melt the butter and add the chopped sage.
While the butter is cooking. Pour the cold water into a bowl and add ice. Make sure the bowl is slightly smaller than the bowl you’re pouring the browned butter into.
Cook the butter until the milk solids have browned. Pour the browned butter into a separate bowl and place it on top of the iced water.
Whisk the browned butter and sage until it starts to thicken. This process usually takes 10-15 minutes.
Scrape the butter into a piece of saran wrap and roll into a log. Refrigerate or enjoy immediately on toast or with grilled cheese.
