INGREDIENTS
4 strips bacon
2 slices tomato
1 tbsp mayo
1 egg
2 slices of lettuce
1 bagel sliced
MAYO INGREDIENTS
3/4 cup neutral oil (canola oil or vegetable oil)
1 egg
2 tbsp egg whites
1 tsp dijon mustard
2 tsp red wine vinegar
INSTRUCTIONS
Preheat the oven to 400F. Line a baking tray with parchment paper.
Add the four strips of bacon. Bake for 15-22 minutes or until preferred crispiness.
During the last 5-8 minutes of the bacon baking. Heat a pan over medium heat and grease with oil.
Crack an egg over the pan and cook until the egg whites start to bubble.
MAKE THE MAYO
Combine all the ingredients in a tall glass jar and emulsify, using an emulsifier.
Slice the bagel in half.
Coat both sides of the bagel with mayonnaise.
Add the bacon, tomato and lettuce on the bottom half of the bagel. Top with the egg. Add the top half of the bagel. Serve immediately and enjoy!
