If you’re looking for the perfect cookie with a crispy edge and a gooey inside, look no further. These cookies take under 30 minutes to make and I promise they will be a hit. I had to stop myself from eating the entire batch in one go- which was very difficult.
Makes approximately two dozen cookies that are 2 inches in diameter.
Dry Ingredients
1.5 cups flour
1/2 tspn salt
1 tspn baking powder
1 tspn baking soda
Wet Ingredients
1 egg
2 egg yolks
1/2 cup butter room temp
1/2 cup sugar
3/4 cup brown sugar
1 tspn vanilla
1 cup chocolate chips
1/2 cup brown butter honey walnuts
Walnuts
1 cup walnuts
4 tblspn butter
1/2 cup honey
INSTRUCTIONS
To prepare the walnuts:
Add greased párchment paper to a cooling rack.
Add 4 tblspn of butter to a heated pan until golden brown.
Add 1/2 cup honey to the pan and mix for 1 min.
Add 1 cup of walnuts and mix until well coated.
Let the walnuts sit on the stove and mix occasionally until toasted.
Pour the walnuts on the cooling rack until room temp. You can also refrigerate the walnuts to speed up the cooling process.
Using a fork, comb through the walnuts until they are broken up into smaller chunks.
Cookies
Preheat the oven to 375 F. Grease at least one sheet pan.
Combine all the dry ingredients in one bowl.
In a separate bowl combine the sugars and butter.
Add the egg and yolks one by one. Mix until well combined.
Add the dry ingredients to the wet ingredients and mix until well combined. The dough should be a thick consistency.
Fold in the chocolate chips. Then add the candied walnuts.
Shape the dough into 1 inch balls and place on the sheet pan.
Bake at 375 F for 8-10 minutes for a medium rare consistency.
