INGREDIENTS
550 G flour or 4 cups
2 Tspn salt
2 Tspn yeast or 8 g
2 Cup warm water divided into 1 cup
1 Tablespoon sugar
1/4 Cup olive oil divided into 4 tablespoons
INSTRUCTIONS
Combine the flour and salt. In a seperate bowl proof the yeast: combine the 1 cups of warm water, yeast and sugar. Mix and let it sit for 12-15 minutes until the yeast has formed a foamy top.
Add the yeast mixture to the flour and mix with a wooden spoon. Add another tablespoon of olive oil and the other 1 cup of warm water. Mix until there is no flour bits left and the dough has formed. Cover the dough with plastic wrap or a damp towel. Let it rest for at least one hour or until the dough has doubled in size.
Grease a 9X 13 inch pan using olive oil. Add the focaccia dough to the pan and shape it until it reaches the corners. Cover the pan and let it sit for another hour or up to 3 hours or until the dough is approximately 1-1.5 inches height.
Drizzle another 2 tablespoons of olive oil on top of the dough. and add fresh herbs like sea salt, pepper and fresh rosemary. Using your hands, dimple the focaccia.
Bake at 400 for 20-25 mins. Let cool for 5 minutes and enjoy.
