Cook Time: 2 hrs (includes baking and rising)
Ingredients
Focaccia
450 g all purpose flour
2 cups warm water, divided into cups (110 F temperature)
7 g yeast (2 tsp)
12.5 g sugar (1 tbsp)
6 g kosher salt (1 tsp)
2 tbsp olive oil plus for for greasing the pan.
Garlic Butter Topping
1/4 cup butter
2 tbsp chopped parsley
3-5 cloves garlic, minced
Instructions
Make The Focaccia
Combine 1 cup warm water, yeast and sugar in a smaller bowl. Mix with a fork and set aside to proof for 5-8 mins.
While the yeast is proofing whisk the salt and flour together in a larger bowl.
Once proofed add the yeast mixture and the other 1 cup of water to the flour. Mix until a dough is formed.
Add the olive oil. Mix until the olive oil is incorporated into the dough.
Cover the bowl with a damp cloth or plastic wrap for at least 1 hr or until the dough has doubled in size.
Grease an 8x 13” pan generously with olive oil.
Pour the dough onto the pan. Stretch the dough to reach the corners of the pan. If it can’t reach, the dough will proof and expand in size.
Cover with plastic wrap or a damp towel for 30 mins and proof.
Preheat the oven to 425 F.
Generously drizzle the focaccia dough with olive oil. Spring with salt.
You can add fresh rosemary or thyme as well.
Dimple the dough using your hands.
Bake for 25- 30 minutes.
Make The Garlic Butter Topping
Melt the garlic in the pan over medium low heat.
Add the garlic and cook until slightly browned (about 8 minutes).
Turn off the heat. Add the fresh parsley and mix.
Pour the garlic butter mixture on the focaccia. Serve immediately and enjoy!
You can also bake the focaccia ahead of time and make the garlic butter fresh to pour on top.
You can serve the garlic butter as a dip too!
