GF Sugar Free Double Chocolate Cookies

If you’re looking for the perfect cookie with a crispy edge and a gooey inside, look no further. These cookies take under 30 minutes to make and I promise they will be a hit. I had to stop myself from eating the entire batch in one go- which was very difficult. 

Makes approximately two dozen cookies that are 2 inches in diameter.

Dry Ingredients

1 cup  rice flour 

1/2 teaspoon salt 

2 teaspoons baking powder 

½ cup cocoa

Wet Ingredients

1 egg 

2 egg yolks 

1 ¼ cups splenda brown sugar or monk fruit sugar (whichever your preference) 

½ cup butter room temp 

1 teaspoon vanilla 

1 cup chocolate chips

INSTRUCTIONS

Preheat the oven to 375 F. 

In a bowl, whisk together all the dry ingredients. 

In a separate bowl, mix together the butter and splenda sugar until well combined. Add the egg and the two egg yolks. Add the vanilla and mix for about 1 minute. 

Add the dry ingredients to the wet ingredients. Mix until a thicker dough mixture is formed. Fold in the chocolate chips 

On a greased baking tray, roll the cookie dough into 2 inch balls. Bake at 375 F for 8-10 minutes for the perfect gooey consistency. Let the cookies cool for 5 minutes and enjoy.
