This is one of the easiest dinners you can make in under 30 minutes. If you enjoy the fresh flavours of lemon zest combined with rich buttery flavours, this dish is for you. This recipe can serve 4 people.
2 golden beets
1 russet potato
1.5 cups flour + more for lightly flouring a surface
¼ cup parmesan cheese
Preheat the oven to 400 F. Poke holes in the golden beets and russet potatoes. Bake for at least 35 mins or until soft.
Peel the golden beets and potato.
Add the golden beets, parmesan and egg to a food processor and blend.
In a separate bowl grate the potato. Add the golden beet mixture to the potato. Mix until well combined.
Add the flour ¼ of a cup at a time until the mixture starts to form a dough- like ball.
Lightly flour a surface and kneed the dough for 5 mins.
Divide the dough and cut it into eight pieces. Roll the dough until it forms a 1/4 inch rope. Cut it into ½ inch pieces. Lightly flour the gnocchi to prevent it from sticking.
Bring pot of water to a boil on the stove and reduce to medium heat. Boil 12-15 pieces of gnocchi at a time. Boil the gnocchi until the noodles start to float. Use a slotted spoon to remove the gnocchi from the pot.
Serve with your favorite sauce and enjoy.
