INGREDIENTS
1 lemon, zested and juiced (don’t throw out the halves- were using them to make the sauce)
200 g Mafalda pasta
1/4 cup olive oil
Salt
2 tbsp Parmigiano plus more for taste
Reserve 1 cup of pasta water
INSTRUCTIONS
Bring a large pot of water to a boil. Add the Mafalda pasta
Heat a pan over medium heat. Add the lemon zest and cook for about 60 seconds. Add the juice of a lemon and lemon halves.
Cook until the pasta is al dente. Add the pasta to the sauce. Turn the heat down to low.
Top with parmigiano and pasta water. Cook until the sauce starts to thicken.
Garnish with lemon zest and parsley.
