One Pot Tortellini Stew

Time: 30 minutes

Yield: 4-6 servings


1 medium onion, diced

2 cloves garlic, minced

2 Italian sausages, removed from the binding

1 package tortellini

2 cup crushed tomatoes (1 can approximately)

1 cup bone broth

2 tbsp tomato paste

2 tsp chilli flakes

2 tsp oregano

2 tsp thyme

1 can cannellini beans drained

1 cup kale

3 tbsp olive oil

Salt and pepper to taste


Heat a pan over medium heat. Drizzle with olive oil.

Add the sausage to the pan and cook until browned. Set aside.

Add the diced onion and cook until translucent. Add the minced garlic and cook for 60 seconds.

Add in the oregano, thyme, chilli flakes and tomato paste. Cook for another minute then add the sausage back in.

Pour in the stock, crushed tomatoes beans and kale. Reduce the heat and simmer for 20 minutes.

Add in the tortellini. Simmer for another 5-10 minutes until the tortellini is cooked through.

Serve immediately and enjoy!
