Strawberry Lemon Crisp

This is the perfect summer dessert. That’s super easy to make.

Filling

3.5 cups strawberries

 ¼ cup  sugar

1 tablespoon lemon juice

1 tablespoon lemon zest

Topping

1 cup all purpose flour

3/4 cup old fashioned oats

2/3 cup granulated white sugar

2/3 cup brown sugar

1/2 teaspoon salt

3/4 teaspoon cinnamon

1/2 cup olive oil 

2 table spoons lemon zest

Instructions

Preheat the oven to 350 F and grease a deep dish pan. 

For the Filling

Add berries, sugar, lemon juice, and lemon zest to sauce pan on medium heat. 

Stir to combine and cook for 10-15 minutes, or until the mixture thickens to a jam- like consistency. 

Cool for 10 mins and pour into the deep dish pan.

For the Topping

Combine the flour, oats, sugars, salt, cinnamon and lemon zest. Then add the olive oil. Sprinkle the topping evenly over the strawberry filling. 

Bake in the oven for 35- 45 mins or until bubbly. Serve after cooling for 10 minutes.
