Ingredients
Dry Ingredients
1.5cups flour
2 tbsp corn starch
1/2 tsp salt
2 tsp pumpkin spice
1 tsp baking powder
1/4 tsp baking soda
Wet Ingredients
1/2 cup granulated sugar
3/4 cup brown sugar
1/2 cup butter room temperature
2 yolks
1 egg
1/3 cup pumpkin
Other
1 cup white chocolate chips
3/4 cup macadamia nuts
Instructions
Combine all the dry ingredients in a bowl and whisk until everything is well combined.
In a separate bigger bowl, cream together the butter, brown and granulated sugar (about 2 minutes).
Add the egg and 2 egg yolks and mix (2-3 minutes). Add the pumpkin and vanilla. Mix for another 3 minutes.
Slowly mix in the dry ingredients with the wet (about 1/4 cup at a time). Mix until there are no visible flour streaks (3-4 minutes).
Fold in the macadamia nuts and white chocolate chips.
Set the cookie dough aside in the fridge for 30 minutes.
While the dough is chilling, heat the oven to 375F. Line a baking tray with parchment paper and grease.
Once the cookie dough is ready, scoop the dough into 1-2 inch balls and place onto the baking tray.
Spread them 2 inches apart.
Bake for 8-12 minutes.
Let cool for 10 minutes and enjoy!
